One of my most favourite breakfasts is pancakes. You can do so much with them: sweet, savory and can be made to suit any point of the day. When I first cut refined sugars from my diet, pancakes were still very easy to make. In fact, they were more tasty. Then I decided to become vegan every other day. Pancakes remained an easy task as I was still happy to eat eggs at the weekend. However as I became more vegan, I noticed that my pancakes were starting to become a distant memory. As a sufferer of endometriosis and other inflammatory illnesses, my decision was purely based on my health. To learn and share vegan recipe ideas, I joined a vegan social media "community". It was here that my relationship with pancakes started to edge towards divorce. I recall one fine day, I was nonchalantly looking through the site when I came across an animal rights poster on eggs. At the time I didn't think too much of it. However a couple of evenings later I was sat at home eating scrambled eggs with kale and the egg poster came to the forefront of my mind. I have NEVER looked at eggs in the same way again. To say that I am distraught is an understatement. Do you know how many vegan pancakes attempts I have made? How many times my husband has had to witness the profound obscenities coming from the kitchen as I have watched my 'pancake' recipes turn to mush right before my very eyes. Well neither do I as I have lost count. I have thrown my pancake pan down in a frustrated rage so many times, I am surprised it is still in one piece. But what can I do? I am officially an eggaphobe! I just can't bring myself to get over my thoughts in my mind. After much hardcore perserverance, prayers for forgiveness (for my kitchen rage) and some imagination. I have FINALLY come up with an American style pancake recipe-Bella's Beetroot Pancakes. They are sooooo delicious, don't take it from me, try the recipe for yourself.
