Bella-fied Granola Bars

...because no one likes to struggle through the afternoon slump...

We have been having such a busy time in the Breakfast by Bella household lately that I haven’t really had time to make any treats. I’ve been going to my normal day job absolutely dreading the inevitable afternoon lull. It typically hits around 3.30pm ish…ok 2.30pm ish…alright alright, mostly straight after the lunch break at around 2pm. What can I say? Offices were not built to be engaging for 8 or 9 bloomin’ hours and the human concentration span is said to last an average of 20 minutes. So where does that leave a foodless Bella after 6 hours of work. Let me tell thee: a snackless clock watching wreck. So I figure something has to change. Enter my Apricot and Coconut Granola Bars.

Now I have to admit, I have never made granola bars before now. Lots of people have been saying to me: “so you make granola. Oh you should make granola bars”. Then I look at them as if together we have just shared this ultimate big flashing lightbulb moment as I thank them for the idea.  However, I am really thinking to myself: “ummmm how do I make granola bars?” I told you I was honest!

Anyway today I thought I’d give it a go. Now as much I questioned how a granola bar is made, I also realise that it is pretty self explanatory: oats, syrup and some kind of oil. Right? So as I did some research, it struck me that a granola bar starts off with a raw oat base. So what really distinguishes it from a simple oat bar or a flapjack? Please forgive me if I am missing the point here, but isn’t a flapjack also oats, syrup and some kind of fat (i.e., butter or, in the vegan world, oil). Anyway, I won’t bore you anymore with my granola bar vs flapjack confusion. However, I will tell you this, what I made is what I consider to be a granola bar: baked granola mixed with softened dried apricots, coconut oil, coconut flakes, vanilla powder and I also added some maca powder for the extra yum factor. The result: a yummy, scrummy, bella-fied bar of baked granola with raw goodness.
