Cacao Pancakes

There's only one word to describe this brekkie: NOMILICIOUS...

Ingredients

Pancakes

  • 1 banana
  • 50g oats (use gluten free if desired)
  • 1 tsp cacao
  • 1 tsp coconut oil 
  • 70ml almond milk 
  • A sprinkle of coconut flakes and nuts
  • A little extra coconut oil for the pan (approx 1g)

Strawberry filling

  • 8 strawberries
  • 10ml water
  • 2 tsp chia seeds

Raw Chocolate topping

  • 10g raw cacao paste
  • 2 tsp agave syrup
  • 1 tsp coconut oil 

Method

  1. Make the strawberry filling first: blitz the ingredients in a blender and simply leave to one side while you make your pancakes.
  2. For the chocolate: place the ingredients in a glass bowl over a saucepan filled with heated water (NOTE: If possible, do not let the ingredients heat over 42 degrees celsius. This is to preserve its nutrients. If you have a thermometer, use it to check the temperature). Once melted, leave to one side. 
  3. Now for the pancakes: place ingredients in blender and blitz together.
  4. Using a kitchen towel, spread a teaspoon of coconut oil onto a non-stick frying pan and heat at a medium heat.
  5. Cook your pancakes. Keep on the look out for the pancakes raising around the edges; this is when you know it is time to flip them. 
  6. Once cooked, make your tower by filling the pancake layers with the strawberry filling.
  7. Top with raw chocolate, coconut flakes and nuts.
