Easy Berry Smoothie Bowl

Easy recipe, accessible ingredients and just YUMMERS!!

Ingredients

Serves 2 smoothie bowls or jars :)

  • A handful of Brazil nuts*
  • 30ml water
  • 65g white cabbage**
  • 200g frozen berries (I used 70g raspberries and 130g blueberries)
  • 2 heaped teaspoons peanut butter
  • 1 teaspoon maple syrup  

*cashew nuts or almonds would also be a great alternative

** You may think this is mad!! TRUST ME - you cannot taste it and it is a great way to add thickness and nutrients without adding more sugars!

 

Method

  1. Place Brazil nuts and water into your blender and blitz to make a cream
  2. Cut cabbage and blend into your Brazil nut cream
  3. Add the rest of the ingredients and blitz blitz blitz until smooth

TIP: if the mix is not blending well, open your blender jug and mix around moving ingredients back to the blades and then try again. If it is being really stubborn, then add a touch of water but just a touch as needed - the idea is for it to be thick and creamy :)
